We feel you. These Protein Oatmeal Fudge Bars are the perfect snack for you, your spouse, and the kids. Everyone will be asking for more! They are sure to cure your sugar craving while delivering some serious protein power. Kid friendly, adult approved, no baking required, and fun for the kids too!
Protein Oatmeal Fudge Bars
1 cup chocolate chips
1 cup peanut butter
1/2 cup protein powder of choice
2 1/2 cup oatmeal (quick or old fashioned)
1 tsp vanilla
1/2 cup honey
1/2 tsp salt
Mix the oatmeal, honey, salt, vanilla, and 1/4 cup peanut butter together. Layer into 9×13” or 8×8” baking dish lined with parchment paper, but reserve approximately 1/2 cup of oatmeal mixture. Press down with spatula or fork to form even layer.
Melt chocolate chips and mix with 3/4 cup peanut butter and protein powder. Pour mixture on to oatmeal layer.
Spread even and top with remaining 1/2 cup of oatmeal mix. Cool in freezer or refrigerator until firm. Cut into squares.
